Our Winemaking Style


"I have a very simple winemaking philosophy...
It is to feature the nuances of the land and fruit my wines are made from. I pride myself as a New World winemaker. I'm very interested in new techniques. I want to play. I fiddle to the nth degree. I try to express a full degree of the varietal, and maybe not all of that comes from the vineyard. I think that the days of making wine and selling it amongst our own village are a thing of the past, and now we ship it all over the country and the world. I need to make something I can stand behind. Even in the most challenging of vintages, our wines are made with extreme pride, integrity and artisan craftsmanship that have come to define Capitello Wines. I buy from growers I know and trust, sourcing from just a handful of highly sought after and well respected vineyards, managed by the best in the industry."
When it comes to winemaking, Walsh is confident. "In a sense, I'm an artist in that area," he said. "Good viticulturists are artists in their area, and I'm not. I want to leave it up to them. . . . It's a lot of work!"

Brut Sparkling

Non Vintage: 72% Pinot Noir & Chardonnay 28% The tightness of the extra-fine bubbles & the soft straw color of this wine is beauty in itself. Aromatics of the white pear combined with yeasty bread notes perfume the glass. The effervescence of the bubbles along with the pleasant flavors of apples, pears and soft huckleberry fill the mouth, while the brightness of the palate lingers long into the finish.

Pinot Noir 2008, Marlborough New Zealand

Working from the families single newly planted vineyard in the foothills of Marlborough, We hand harvested this fruit in the early mornings to beat the rains, destemmed the fruit directly to tank and inoculated with active yeast for a speedy fermentation before going to barrel. The barrels were 100% French oak from Rousseau and Cadus cooperage and the wine was aged for only 11 months to retain its fruitiness and grounded characters.

Dolcino 2009 Gewürztraminer Dessert Wine (375 ml bottle)

Two vineyard sites: (Airlie – Northern Willamette Valley and Anindor vineyards in the Umpqua Valley) contribute to the complete concentration and depth of flavor that makes the finest Oregon Gewürztraminer. This Gewürztraminer displays a beautiful golden color, while offering aromas of honey, apricots, nectarines and an intense floral perfume. In the mouth , this wine is sweet, round and yet balanced with its acidity. It offers an explosive intensity of rich fruit – apricot, peach and honeysuckle flavors, and a smooth lingering finish.

2011 Sauvignon Blanc, Willamette Valley, Oregon, USA

Sourced from the Walnut Ridge Vineyard nestled in the sheltered coastal range of the southern Willamette Valley near Junction City, OR. Those lush ‘Sauvy’ aromatics of passion fruit and lychee fruit with intense clean lemon zest are quite refreshing. In the mouth, the bright lychee and gooseberry is intensified by the zesty rich mouth feel. It’s a wine best served chilled to enjoy it’s refreshing and quenching flovers. Enjoy!

Pinot Noir 2008, Oregon USA

Sourced from two vineyard sites in the Willamette Valley; Mary’s Peak Vineyard (located just south of Philomath) and Rainbow’s End Vineyard (located in Monroe). Both vineyards are warm sites that are planted on Bellpine soil, offering richness to the fruit as well as elegance to the finished blend. This Pinot Noir greets the taster with rich aromas of ripe raspberry & pomegranate fruits, while offering elegant oak spice, floral and earth tones. In the mouth, a full display of rich berry fruit and silky tannins shows up front. The intensely bright raspberry -blueberry fruit along with oak tones fill out the mid-palate, leaves you with a viscous raspberry linger.

2010 Sauvignon Blanc, Marlborough, New Zealand

Working from the family’s single newly planted vineyard in the foothills of Marlborough, this site offers the full regional integrity without the intense-over the top grassy-gooseberry characters. Vintage 2010 reflected a slightly warmer and longer growing season, thus allowing the fruit to fully mature into it’s rich sauvy flavors. This 2010 Sauvy offers beautifully intense aromas of passion fruit, peach and pears. A hint of oak aging fills out the mouth feel as this wine wows the senses with zesty citrus
